Potato skins

I was having a proper lazy afternoon so while at my mams they were cutting some chips up for the actifry so I said that they should try cooking the skins .... Yum !!!

So instead of gammon and chips it was potato skins and chips for dinner for us .... Think I'm gonna make it a rule if they do chips they need to send the cooked skins down

Just need to work out how I can use the skins one day and the chips/inside potato another .... Not sure it'll keep for 2 days ???

    Have the skins on one day and keep the cut chips in a bowl of cold water until you are ready to use the next day.

    I was thinking that but I wasn't sure if they would be ok for that long in the water :o

    Provided I keep them in the fridge and change the water every day and add a pinch of salt , I've kept cut chips for 3-4 days if that helps?

    If I'm peeling potatoes for roasties, then I do extra and make a pot of mash for the freezer/later in the week.....all the skins get popped in a lidded box full of water in the fridge, they'll last a good few days before being cooked. I roast mine off in the oven after a good drying off with a tea towel, coating in herbs/spices and a bit of oil. Don't over load the baking sheet and they'll go lovely and crispy.

    Nice as a Saturday night snack with some dips whilst watching a film :)

    Boys wanted sausage casserole for getting home from school tonight so I've put the peelings into a tub of salted water in the fridge with some cling lim over ... Gonna have them tomorrow for dinner :D

    I'm so loving The no food waste no spend days :D:D:D
