Just bought 2.25 kg steak mince. Batch cooking

Just bought this as I happened to be in costco and it's on offer, and there quality is good.
Want to cook 2/3 of it and freeze into portions for 1.I've got a slow cooker, so can you cook mince in a slow cooker ( one receive) I need to do this tonight, any ideas for recipes I can go shopping to get some extras. I wouldn't mind making some ready meals out of it for me and to give to a relative who can't cook at all.but I'm panicking at the amount I've bought.

    Hi Carmel, no need to panic. I do this all the time.
    Yes you can put it in the slow cooker. I usually brown it off first but I know others don't so not necessary.

    I d a basic mince which can then be added to to make bolognaise, chilli etc.

    So...

    I add chooped onions, carrots and any other veg I have lying around like courgette and celery, all finely chopped in the food processor. Also peppers and mushrooms.

    To that I add a handful or two of red lentils and a handful of oats to bulk it out.

    Cook in the slow cooker with stock cubes, herbs, salt and pepper and any other additions you want to add to flavour it like Worcester sauce and balsamic vinegar or wine.

    When it is cooked I portion it up and then it is ready as a shepherds pie base or topping for jacket potato, pie filling etc. With the addition of tinned tomatoes it becomes bolognaise and with tomatoes and kidney beans it becomes chilli.

    Don't forget you could freeze it uncooked too - e.g. make into burgers or meatballs and freeze like that. I would buy about 3kg of mince at a time, make it into plain mince (to use for cottage pie, in pastry as beef & onion pie, etc.), a bolognese sauce (which could then be made as bolognese, lasagne, etc.), chili (to serve on rice, on jacket potato, on nachos, etc.) and the rests into burgers or meatballs.

    I've just brought 4kg of mince, batch cooked some for cottage pie, then froze the rest in250 g blocks, ideal for two,
    today's mood is brought to you by coffee, lack of sleep and idiots.

    Oh sorry. I add a little liquid and more if I add the lentils and/or oats as they soak it up. Don't add too much in a slow cooker as it doesnt evaporate. Did you do yours last night? Esther x
