Brownies are very simple. They are really just a failed chocolate cake. According to American legend, they began when a neurotic 1920's housewife kept opening her oven to check on her cake causing it not to rise. But the result was pretty tasty so what the heck. (Would my mom and the Betty Crocker cookbook lie?) I've adapted this from cups to grams and oz so if my conversions are a bit wonky, again what the heck. This is brownies, not chemistry. You can play around with the recipe until you get what you like best. There's no "right" recipe.
Primo Brownies
makes, oh a whole lot
8 oz/250 g butter, melted and cooled
8 oz/250g self raising flour, sifted
100g/4oz cocoa powder
11/2 tsp cinnamon
2 oz/60g caster sugar
2 oz/60g brown sugar
3 eggs
(plus any secret ingredients you fancy. I've come across everything from mayonnaise--makes very moist cakey brownies) to cream cheese. I favor a pinch of ground cloves myself. Although stirring in a handful of mini marshmallows is phenomenal, too. And some chopped nuts can be nice)
prehest oven to 350f/180C/gas mark4 and line a large rectangular baking dish (9x11 or whatever the standard is. you know, a normal roasting tin) with baking paper.
Beat the melted butter and sugar together in a large mixing bowl, gradually adding the flour, cocoa, and cinnamon. Beat in the eggs until you get a nice smooth, not too runny batter. You might want to add a dribble of milk or water if it looks too thick to you. Pour into the baking dish and bake for about 20 minutes or until a knife comes out cleanly.
Let cool completely before you cut the brownies or you'll just get a plate of crumbs. Depending on how large you cut them you should get around 20 brownies out of this, possibly more if you are English. (No offense but seriously, rationing is over, people)
My kids like me to sprinkle icing sugar on top of these but suit yourself
