Elderflower Drinks - Help!

I have now picked my elderflowers and they have been rinsed and are sitting in the sink. I'm now away out to get some sugar and lemons and, maybe, citric acid. My questions are: Should I make the cordial or the champagne? Can you freeze the champagne in the same way as the cordial? Also, I am going away on holiday 2 weeks today so the whole process has to be finished by then. Any suggestions/advice would be much appreciated. :confused:

    I would recommend the cordial. I made a batch last weekend - filled one bottle and put the rest in the freezer. It is absolutely delicious and I wish I had saved more flowers in the freezer to make it throughout the year.
    The cordial took only a few days to make. I have also made champagne (24 hours to make) but have not tried freezing it. I think the recommendation is that it be drunk within 6 weeks whereas the cordial has a very long life span.

    Both are nice but very different. Personally I would make the cordial. When the rain stops I am planning on making both the Elderflower champagne for a BBQ we are having in the summer and the cordial to be drunk (with lemonade!!!) throughout the winter to remind me of the summer. I also have a tee totaller who visits frequently and he gets really bored with the standard soft drinks, so it is nice to have some cordial in the freezer to offer him.

    we are teetotal and love something a bit different, also means our son can enjoy our foraging too
  • Thanks - I'll try the cordial then. Trying to buy citric acid was quite an experience! The first chemist looked at me as though I should be locked up (presumably because of the drug connotations). Eventually I found a nice one who didn't stock it but asked how much the recipe needed. When I said only a very small amount he gave me a few sachet samples. I've promised him a drink if it turns out.

    I remember someone telling me about chemists looking at you as if to say "you don't look like a typical druggie".
    I got mine off the shelf at wilkinsons, it's with the homebrewing stuff, so no funny looks there LOL
