I make cheese, plain and sultana scones every day as I have a
    tea shop.

I cook mine at 210 degrees for 15 mins (this is a fan oven)

Dont roll them out too thin, this is the biggest mistake people make, they roll them out to about 1cm and expect them to rise up to
4 cm, roll out to about 2-2.5 cm and they will come up to a good rise.

i used to have a tea shop at a local tourist attraction, i used to get so annoyed when people called it a cafe the name was clearly Millers Tearoom even had it on the aprons and had gingham table cloths, never used to do fry ups and such like but locals still called it the pottery cafe is yours more an old fashioned tearoom
