Pigeon breasts - ideas ?

I have a pack of 10 frozen pigeon breasts. Not sure what to do with them. Anyone got any good ideas ?

Hi, thriftlady! One of our favourite summer lunches is to pan fry the seasoned breast in a little olive oil. We like to leave them pink on the inside. Assembel slice of toast, a pile of *leaves* then sliced breast on top. Deglaze the pan with balsamic vinegar as a dressing.
Need to send DH out to *get* me another pigeon for lunch

Braise them in the oven with red wine. - Had them like this in France they were delicous.

I'm drooling now! :drool:
I've never made them, but mum used to make them years ago. From memory she oven roasted them and made a red wine and garlic sauce. They were small but delicious!

At the hotel I used to work, they used to cook them so they stayed pink. They braised them and served with a red wine and juniper berry sauce and a light salad

Any good butcher should be able to get pigeons for you. Best to buy the whole bird and remove the breasts yourself (easy with a sharp knife). Then you can use the rest of the carcass to make stock etc (90% of the meat is on the breast).
Pan fried or as part of a game pie or stew. Pigeon really is excellent and still cheap.0 -
Thanks guys, some lovely sounding ideas there. I think I'll go with Pen Pen's idea as I've just bought some rocket which I think will be great with them.
I bought them in a vacuum pack at my local farm shop. They weren't particularly cheap -£5.90, but they will serve us amply I think, I can't really see how big they are -I'm assuming 2 breasts each, or am I being greedy ?0 -

Thats not a bad price. I would expect to pay around £1.25 for a whole pigeon. Two each should be enough.0 -
