Urgent ice cream question!

Hi guys,
I've just made ice cream for the first time and it is sitting in a tub on my kitchen unit right now all hot from the pan. My question is...do I put it in the freezer while it's still hot or let it cool???

    I've never made icecream before, but i would imagine you should let it cool down first, otherwise it will raise the temperature of your freezer!

    Hi otter

    Bit baffled why your ice cream is "hot from the pan". What kind of ice cream are you making? Any time I have made ice cream the ingredients have been at least at room temperature. Still, if the ingredients are hot I would allow them to cool to room temperature then put them in the freezer. The trouble with doing that at this time of night is that you are supposed to take the ice cream out and stir it at regular intervals.

    Not sure if I have been of any help at all here. Sorry.

    Hi, Thanks for your responses. I let it cool a little and then put it in on Fast Freeze. It was fine. The ice cream was from a recipe posted on this site which involves heating double cream until it is almost boiling and then adding some sugar, vanilla essence and whisked egg yolks. It doesn't need stirring as it is made with double cream so no ice crystals are formed.

    Turned out to be very tasty too!

    I mixed in a whizzed up tin of raspberries and stirred them through it roughly to make raspberry ripple.

    If you make a custard based one, then generally you let it coolbefore you freeze it, so I expect yours would be the same - glad it worked for you!
