I've made mincemeat... but I think it's gone wrong!

Argh, help!
I've made (fruit) mincemeat in the effort of being organised for my christmas baking, but it appears that all the suet has melted down and is solidifying at the bottom of the jar
It looks horrid
There's just chunks of yellow fat at the bottom!
I cooked it for the right amount of time (it's even slightly burnt...) and put it in the right kind of jar, what else can I do? Should I just leave it and when it comes to Christmas time try and file my pies around the fat?

I shouldn't worry - all the spices & sugar will help it keep. Was it a delia recipe, by any chance? When i cooked hers, mine had big globs in. It tasted great though
I'd leave it & then when making pies just take out the fruit & leave the fat at the bottom of the jar.0 -

it sounds like the fruit mix was too hot when you added the suet, and the heat melted it. i'd just grate the suet into the mix when it was being used.Cats don't have owners - they have staff!!DFW Long Hauler Supporter No 1500

with this recipe, you cook it with the suet in, so that it melts & coats everything. That's why you sometimes end up with big globs of fat - doesn't always look good but tastes nice.0
