Using Potato as cheaper chicken substitute?

I wouldn't fancy Potato fajitas!
Potato curry is good though. For the fajitas, substitute in chickpeas for chicken. Vegetarian shepherd's pie is delicious. There are lots of filling, 'vegetarian' recipes out there.
I try to only eat veg only dinners as much as I do meat - I believe it is helpful from both a health and financial point of view.0 -

Ha, this really made me chuckle!
I'd say beans and pulses are a much more nutritious and satisfying replacement for chicken; chickpeas in curry, beans in chillis. We are a primarily veggie household but have never replaced anything with potatoes. I probably don't even eat them as much as once a week...0 -
I'm a vegetarian and have never used potatoes as a substitute for meat. In fact I rarely eat potatoes, had a baked one tonight for the first time in over a month.
If you are considering substitutes, go for beans, lentils and other pulses, or you could try some of the vegetarian "meat" substitutes, such as Quorn, soya mince (not the chunks, they are like rubber), and supermarkets own veggie products.0
