Gluten Free Recipes

Apologies if this is in the wrong place please move if necessary.
I searched for a thread that was dedicated to gluten free but could not find one. So I thought I would start one.
Cheesy, garlic and herb crackers
pre-heat oven 180 deg c/ fan 160 deg c/ 375deg f/gas 4
100g Doves Farm GF Rice flour
50g Doves Farm GF white bread flour blend
1.5 tsp Paprika
1 tsp salt
1 tbsp powdered Garlic
1.5 tsp herbs (I use herbs de Provence)
3 pinches of GF baking powder
50 grams salted butter (cubed, take out of the fridge for 15 mins, so it is workable.
100 grams very strong cheddar, grated (I used Colliers Welsh Cheddar)
2 eggs
Mix together the flour and salt, work the butter into the flour until it resembles breadcrumbs, add all the other dry ingredients inc the baking powder. Stir in the grated cheese, beat the egg and add to the mixture bring everything together into a ball of pastry (if too wet add a sprinkle of rice flour). Rest the pastry for 10 mins. Place pastry on either a mat or a piece of cling film, cover with another piece of cling film, then start to roll out the pastry until 4mm thick (I use a silicone mat and a plastic rolling pin) as the mixture is more sticky than normal pastry. Cut into whatever shapes you fancy, I do squares. Place on an oiled baking tray , bake in a pre-heated oven for 15-18 mins (they will crisp up when left to cool). Very yummy when cool, can be kept in a sealed container for a couple of days, but they do go softer if not eaten immediately.
