What can I make with this lot?

Hello all, can I pick your brains?

I'm starting to run low on funds this month, but due to a combination of poor shopping, housemate donations due to holidays, unexpected veg box and going through a phase of not being bothered to cook, I have a tonne of food I really want to use up properly!

So, help! What would you make with this lot? (I have a good storecupboard of herbs and spices etc, and can buy extra stuff).

I used to be veggie and don't need meat in every meal. I live alone so freezable stuff is good.

Veg:
17 bell peppers. Yes. Really. 17 :o Mostly red but also green/yellow.
1 butternut squash
3 sweet potatoes
2 fresh corn ears
5 tomatoes (don't like these raw)
onions
new potatoes
Frozen sweetcorn and peas.
Tinned tomatoes.

Protein:
Frozen white fish
Frozen mince (250g, I think)
Various tinned beans (black eye, kidney, chick peas)
Baked beans
Cheese

Carbs:
Pasta
Rice
Couscous
Noodles

Also, a couple of jars of curry (passanda and bhuna I think) sauces that I'd like to use up.

    Do you have any eggs?
    Paid off the last of my unsecured debts in 2016. Then saved up and bought a property. Current aim is to pay off my mortgage as early as possible. Currently over paying every month. Mortgage due to be paid off in 2036 hoping to get it paid off much earlier. Set up my own bespoke spreadsheet to manage my money.
  • You could roast some of your peppers, sweet potatoes & butternut squash and make Roast Pepper soup/roasted Butternut squash & sweet potato soup. Also with the rest of the butternut squash/potato you could mash & serve as a cottage pie with your mince & peas. Do you have chilli powder? You could make a chilli with mince, tinned toms, kidney beans, onions, pepper and serve with rice & grated cheese on top.

  • I don't technically need it to last a certain number of days, just could do without spending much more this month so don't want to be throwing stuff away.
    I have a couple of eggs and could buy more.

    Stuffed peppers with rice, onion, beans, tomatoes and herbs

    Roast butternut squash soup

    Sweet potato soup

    Fish cakes or meat balls (if you have some kind of flour)

    Bolognese type sauce with the tinned tomatoes, onion, possibly the mince or beans, peppers and sweet corn served with pasta

    I would chop and freeze some of the peppers :)

    You could make a fish curry, when you say it goes watery how are you cooking the fish?

    What budget have you got to get any extras?
  • I’m cooking for one most of the time as well and your list is not dis-similar to mine.

    I would start by making a batch of tomato & red pepper sauce – and freeze in ice cube trays/bags, so that I only need to defrost in minutes however much I need.

    Roasted Peppers – cut peppers in half lengthways through the stalk, quarter tomatoes, slice a clove of garlic. Place peppers in a roasting dish put tomatoes quarters in the cavity along with the garlic. Sprinkle with salt & pepper, drizzle with olive oil and roast for about 50mins at 180c. Serve hot with herby couscous and some crusty bread to mop up the juices and save some to have with salad for lunch/dinner the following day.

    Vegetable Curry & rice – using a jar of curry sauce, ½ the butternut squash, sweet potato and ½ tin of chickpeas. Should make about 3-4 portions to freeze.

    Roasted vegetable pasta – roast ½ butternut squash, sweet potato, onion, peppers, herbs – I would split this in half and have some hot with pasta and sprinkled with cheese, the rest could be used the following day mixed with the rest of the chickpeas and served with a salad.

    Fish baked with sliced peppers & tomatoes, served with sweet potato wedges.

    Chilli using the mince or just the beans – bulked out with veg

    Cheese and onion sausages – mix together 50g fresh breadcrumbs, 40g strong chedder (grated), 2 spring onions (finely chopped), pinch of sage, ½ tsp mustard powder. Separate an egg saving the white for coating. Add the egg yolk to bind the mixture and form into 4/5 sausages. Roll in the egg white then breadcrumbs, fry until crisp & golden. Serve with baked beans or hm tomato sauce and potatoes – cook extra potatoes and the next day they could be sliced and fried, some of the roasted veg, peas & sweetcorn added plus a beaten egg to make a frittata.

    I have to admit loving need2bthrifty's idea to make roasted red pepper and tomato sauce to freeze, so think that will be on the cards.

    Will take trolleyrun's idea for fish cakes too.. never made them before, no better time than now eh? :) Maybe with the corn and some roasted squash.

    Then maybe try a fish curry? I will have a google and see if I can find a recipe that sounds nice. It's not something I've tried before.

    Wow, I think you may all have convinced me to try THREE new recipes :D
