impossible cake

I remember making this at school we mixed all the ingredients together put it in a baking tin and when it was cooked it had pastery on the bottom custard in the middle a cake on top. Has anyone got a recipe for this or something similar. Thanks

    I think that you may be thinking of lemon layer pudding, although it doesn't have pastry on the bottom. Lots of recipes on google !

    Was that the one with coconut in? My friend used to make it and called it impossible pie. I'm sure I've seen it on here somewhere some time ago, if not I can get the recipe for you.

    I was thinking of impossible quiche. Yes the impossible pie is a sweet one with coconut. Mmmmm haven't made it in ages.

    Mix sugar with flour, baking powder & salt. Add melted butter. Add 2 well beaten eggs and milk. Mix in coconut & vanilla. Pour into greased pie plate and cook in moderate oven for 30 - 35 mins.

    NB: The reason it's called Impossible Pie is that when it's cooking it makes it's own pastry layer, it's own egg custard layer & the coconut rises to the top making a topping layer. :p How clever is that.

    How to make Impossible Pie

    This recipe creates a custard pie with a pastry base and coconut topping. You can make this recipe without coconut, in which case it becomes an egg custard with a pastry base.

    This recipe works because the pastry ingredients are heavier than the rest of the mixture, and so sink to the bottom, while the lighter coconut rises to the top. It is called Impossible Pie because it seems impossible to think that the gloopy mess can become a pie.

    Before you start, make sure you have an oven-safe 25cm wide, 5cm deep dish, an oven and a food processor.

    Preparation: 5 minutes
    Cooking Time: 1 hour
    You will need:

    5 large eggs
    175g / 6oz caster sugar
    Pinch of salt
    450ml / 16fl oz milk
    1tsp vanilla extract
    50g / 2oz softened butter or margarine
    65g / 2½oz plain flour
    ½tsp baking powder
    50g / 2oz desiccated coconut
    Method

    Pre-heat your oven to Gas Mark 4, 180°C (350°F), or 160°C (325°F) for a fan oven.
    Place all the ingredients into a food processor and blitz.
    Pour into the oven-safe dish.
    Bake for an hour.
    Cover the pie with foil and store in the fridge. It will keep for two to three days. It is best served cold, but is also nice hot.

    Found the recipe on the recipe thread:j :j :j :j :j :j :j :j :j would put here if I knew how to so it would be easy for others to find, but thats a bit too technical for me:confused::confused::confused: . I think I will let DS make it at the weekend as it is a funn pudding for kids to make.
