Small batch chocolate making -
Cocoa beans are delivered fresh from the company’s Saint Lucian plantation, Rabot Estate, as well as Ghana, Trinidad and Vietnam straight into the small batch roasting and chocolate making kitchen in Monmouth Street. Customers can see, smell and taste the entire, delicious process in action – from roasting and winnowing, to conching and tempering. Small batches of rare chocolate will be made daily in the store’s basement kitchen, which takes theatre kitchen to a whole new level.Can't Smile Without You0 -

1) Roast+Conch at Monmouth Street, London WC2 - see post #2 and also read the label of the Mayo HERE
2) St. Lucia. The comp text says "Introducing Cocoa Cuisine ..... inspired by the Hotel Chocolate St Lucian cocoa estate kitchen". Also from HERE (the same source as post #2) it says "At Roast + Conch, customers can also taste Hotel Chocolat’s exclusive ‘cacao cuisine’ menu, developed at the company’s Boucan Restaurant on its Saint Lucian cocoa estate"
3) Huntingdon Cambs. The factory and research is here - see THIS and THIS

PS. Hotel Chocolat head office is in Royston Herts - I can't find a link for Bedford(shire) except for standard shops.0 -
Bedford is where the Affinity magazine is based so it's nothing to do with that. I'd be tempted to say St Lucia too, as it says "surrounded by cocoa in St Lucia, the Hotel Chocolat chefs....." so are they based there?? I'm going to have a think about this one I think!0

I agree One-Eye - I have gone for St Lucia too - if you have a para of info followed by a question, then surely the answer must be located somewhere in the info provided!
