Hi there,
I've offered to take a pudding to a friends house later for hte kids tea, the problem is our local shop is closed this week & I don't have very much in the house, plus I\m working today
I was thinking of making a sponge pudding in the microwave but I've only made individual ones for the kids before - can I make one large one? there are 7 children in total !!!!
many thanks

Right here is the recipe
125g butter or margarine
4tbsp golden syrup
85g caster sugar
2 eggs
125g self raising flour
1tsp baking powder
About 2tbsp warm water
1. Grease 1.5 litre pudding basin. Spoon syrup into base.
2. Cream butter with sugar until light and fluffy. Add eggs beating well between each addition.
3. Fold flour and baking powder into creamed mix with metal spoon. Add enough water to give soft dropping consistency. Spoon into pudding basin and level top.
4. Cover with microwave safe film, leaving a small gap for air to escape. Microwave on HIGH for 4 minutes, then remove and leave to stand for a further 5 minutes while it continues to cook.
5. Serve with custard.
I have found that it works better with 5 minutes in the microwave and 5 minutes standing, but that may be my microwave.
I warn you it is really yummy!Fashion on a ration 0 of 660 -
