I had this idea and wondered what you thought, if you'd every seen/done this:
I thought I could finely chop some veg plus rice noodles plus stock and some flavorings (herbs, thai paste etc) take it to work and then just add hot water for a decent lunchtime soup.
Do you think it would work?

the veg would still be crunchy but I think that it would work. It would probably be best to use stock powder rather than cubes, something like this:

I know Hugh did quite a few gorgeous varieties. Lots of flavours work really well. Have a look on google and I'm sure you will find lots of suggestions.Opinion on everything, knowledge of nothing.0 -
I use cheap packets of Chinese noodles that come with a soup base, add boiling water, microwave for 3 minutes and then add a handful of frozen veg (peas, broccoli, sweetcorn etc) and nuke for another minute.
