Fruit in Trifle

Hi all,
I'm making a trifle for a christening on Sunday and had to start it tonight as it will have so many layers I need lots of time for each one to set!
However, I've just done the bottom layer with Swiss roll and fresh raspberries with raspberry jelly. I've glanced over at the raspberry packet and see they are best before 8th which is Sunday!
So, my question is, will they be ok till then? They are poking out the top of the jelly at the moment but when I get the blancmange layer on in the morning it will stop the air from getting to them... That should help to keep them from going off shouldn't it?
Thanks
Kevin

Best before just means they may start to deteriorate from that date they don't go 'off' immediately , they'll be fine..#6 of the SKI-ers Club :j

For future reference, you could use frozen raspberries, just put them in frozen and they will thaw as the jelly cools and sets.0

Or dissolve your jelly in the minimum of hot water/microwave it then make up to 1 pt with ice cubes. It'll set before you can pour it over the fruit!

And then if you want to be really [STRIKE]lazy[/STRIKE]quick, add ready made custard.0 -
Thanks everyone. The raspberries were fine and the trifle was delicious!
