Changing Trains

I am travelling from Doncaster to Southampton (no changes) with Cross Country trains and returning the day after.
On the return journey I have 1 change at Sheffield.
Might seem a stupid question but, can I catch any train that is going to Doncaster (that is, a different company to "Cross Country") or will I have to catch a designated one at a certain time?

If it says something like "booked train only" or XC only" or "crosscountry only", then obviously those restrictions will apply.
Otherwise, what ticket have you purchased?0 -
Not bought yet but it will be bought in advance with a reserved seat to Southampton and an open return0

With a open return, You can use any train regardless of TOC0

Rubbish, an Open Return or Anytime Return as it's now better know as can have TOC restrictions. IE
Carlisle to Leeds Route: Any Permitted £51 which means any permitted route/train company
Carlise to Leeds Route: Via Appleby cheaper £44 will only allow travel only via Appleby on a Northern service

Yes, that was the original journey, but the OP's question was "having arrived at Sheffield, can I catch any train to Doncaster?"
