Meal for my Parents and Nan??

I've decided to have my Mum, Dad and Nan over for dinner for my Nan's birthday in a few weeks but don't know what to cook.

My Dad is a big fish lover but my Mum's not too keen. My Nan isn't too fussy. I thought I'd make Lemon tart for pudding but apart from that I've got no idea!!

Any suggestions??

PS Anything but pasta/italian food as my Dad doesn't like it.

    I would like to make it a bit special as it's Nan's birthday but I don't want to overstretch myself!!!! lol

    I'm more veering towards a fish dish as I know my Dad and Nan like it and just asking my Mum if she minds!!:D

    If your mum doesn't like fish why not cook her a chicken breast?

    I do a Nigella recipe for my OH and parents, friends etc fairly often.

    You slow roast chicken pieces (not breast) with wedges of lemon, whole garlic bulbs, thyme and a glass of white wine. Serve with rice/potatoes and loads of steamed green veg.

    Lemon tart afterwards, with a few raspberries and double cream. Yummy.

    Let me know if you want me to dig out quanities/oven temps and timings.

    I saw on ready steady cook a crusted rainbow trout. I found the recipe off the bbc website and made it. Im not a great fish lover myself but i really did like this. The fish is so soft on the side without any skin but the skin side is nice and crispy with a nut crust. I cooked mine with another ready steady cook recipe (satued new potatoes with Dolcelatte cheese) and it was really nice.

    You could have a look on the bbc website for recipes with fish in them and see what you like.

    Hi there
    Well since its for Nans birthday, id go for nans favourite things... how about a nice chicken casserole, you could put baby carrots, swede etc in....so you can get it all ready in advance and just let it look after itself..you could slice potatoes and onions, add a little stock or milk and stick that in part way through the casserole cooking (saving energy too :-)..and then just steam or micro a few peas or greens
    I dont know how old your nan is..im thinking of mine who is 92...so eats very little and likes nice light things....although she would make room for pud LOL
    and if you wanted a bit of extra bulk for dad, you could always get some puff pastry, roll it out, cut into individual portions and bake it for the last 15 mins on a baking sheet...and just pop a piece on top of the casserole so you would almost have a pie, but without pastry exploding wheen you serve..

    How about the following its dead easy and only people who dont like it are veggies.
    1 skinned chicken breast each
    1/2 jar mango chutney
    1pnt double cream

    1 large deep ovean proof dish oven on low to med heat (all cookers differ and this is a slow cook dish).If to hot cream will split.

    Fry chickn in a little oil until slightly coloured.
    Whip cream until dropping consistancy.
    Fold in 1/2 jar of mango chutney (im a piglet so use full jar)

    Put chicken indish spoon over cream mixture pop in ovan middle shelf and cook until sauce is a nice golden brown.

    I serve with pasta or wild rice and green veg but is nice with jacket potatoes or new potatoes.Should if your lucky be some sauce left over for a pata lunch or supper for one next day.

    I tend to make duble amounts of sauce as the kids think this is the best bit.Works with pork and pheasant to.

    Your sharp lemon pud would go down a treat after this.:rotfl:

    It's a standing joke in our family that we don't know where on earth she puts it all!!!!
