Tarragon Vinegar?

Hello,
I am trying a new recipe on Thursday, which requires tarragon vinegar. I have never heard of it and I have tried Morrison's and Sainsbury's but no joy.
I've bought some fresh tarragon but didn't know if anyone knows where I can buy this vinegar from, or how to make it myself.

    I would just put in the required amount of vinegar as white wine vinegar and some fresh minced tarragon. No point buying an expensive product you aren't going to use often.
    What is the recipe? Just so we have some context.

    Will have to root through my cupboards to see if I've any white wine vinegar lurking at the back. I know I have balsamic and malt... :D

  • If you can't find any white or red wine vinegar just use the malt and fresh tarragon. It might not turn out precisely right but close enough to not matter very much.

    I usually have a little bottle into which I put some tarragon (I grow it) and some white wine or cider vinegar to infuse.
    I have to disagree about using malt vinegar - it's a very distinctive taste, and being used in a recipe with a very delicate taste.
    I would, unless money is very tight, but some white wine or cider vinegar - it lasts for ages and you can use it in lots of things. If you have the tarragon, then make a bottle for future use.
    If you really have to substitute then I would use a smaller amount of lemon juice, and increase the wine (if the recipe calls for it)

    I found some white wine vinegar in the cupboard so I have poured some in a container along with fresh tarragon. It'll only have a day to infuse so probably won't do much but it's better than nothing.
    If we like the recipe then I'll make up some a few weeks in advance next time.

    If you heat it up for a while, it'll infuse better. Just pop it in a saucepan, bring to a boil then turn off the heat and allow it to infuse in the pan.
