    Actually, some do!

E.g. NGSU (Nationwide group staff union) represents only staff within the Nationwide building society.

My apologies....though surely this is a massive conflict of interest?

The union is independent from the business its' members work in but only represents staff in one business.

They are less common but they do exist.

Just seems they can be more involved for their own purpose rather than a separate entity.

    Maybe consider joining PCG?

But if there is an active union representing members employed by the company you are contracted to then it may be worth considering joining them too. Ask them if and how membership may benefit contractors.

I think as Southend1 suggest that the PCG might be a better option for you. As someone who was an IT contractor for 11 years I would never have considered joining a union during that time. I can't see what they would really be able to offer you - in particular they would not be able to represent you in any dispute, as your employer is not the company that you are doing the work for, that relationship is a business to business one and is governed by the terms of the contract.
