Good morning!
I find myself without a job at the moment and money is a bit tight so I was wondering what I can bake... I know that's a bit random as there are loads of things but you lovely people all have great ideas/recipes....
I am really looking for inspiration for the following ........ oh and I am a rubbish baker so the easier the better lol
Easy bread which doesn't take forever
Easy biscuits
Anything which doesn't involve eggs (for when I have none)
Cakes
Your help/ideas will be gratefully received, thank you x

I don't bake very often, so tend to have odds and ends of ingredients loitering in the cupboard. This loaf is good for using them up. Every bake is different depending on what I've got in, an endless number or combinations!
3/4pint of tea
10oz any kind of sugar or a mixture
1lb SR or plain flour, if plain add 2 tbsps baking powder
2oz butter, any kind of spread, even a mild flavoured oil
10oz fruit, any kind of dried, or replace part of this with grated apple/carrot
2 tbsps syrup, treacle, marmalade, maybe jam
2 tbsps mixed spice, or your own mix of ground ginger, cinnamon, nutmug
1 egg if you have it, milk if you don't
put the tea, sugar, fruit, syrup/marmalade, butter in a large pan, bring to boil for a few minutes.
Set aside to cool. meanwhile put the oven on low to warm up, at Gas 3, 170degrees.
once the mixture is cool, add all the dry ingredients and mix well. Add the egg if you have one, or enough milk to make the mix fall off the spoon in soft blobs.
Pour into two large loaf tins, or cake tins, or even into muffin tins - whatever. Don't fill more than 2/3rds full though. bake for an hour, or 20 minutes if little buns. check if it's cooked by putting a skewer or sharp knife into the middle. If it comes out clean, it's done.
Serve sliced with butter if you like. The buns are nice with a little butter icing. Will keep for about a week, or freezes quite well.0 -
my scone recipe is easy & doesn't use eggs:
8oz self raising flour
2 oz butter (don't use marge, never works)
1tsp baking powder
milk to bind
then if sweet: 2 oz sugar & sultanas if you want. If cheese: about 4oz really nice strong cheddar + 1/2 tsp mustard powder
- turn oven to 200C
- rub butter into flour
- stir in other ingredients, except milk
- stir in enough milk to give a fairly stiff dough
- roll (I just pat it!) out to 1" thick then cut out rounds
- onto a baking sheet, brush with milk
- ten mins or so in oven, dont open door until brown on top

Cake plain sponge fill with jam, buttercream, nutella etc.
Weigh eggs i use 3 for two sandwich tins, whatever your eggs weigh (in shells) use same amount of butter/marg and caster sugar cream tog, add eggs one at a time beating well, fold in same amount of sr flour!0 -
I like 'Wacky cake', which is an American cake from the depression. No eggs, and it is mixed in the tin you bake it in, so not much washing up!

It is American, so if you don't have measuring cups a tea cup is about the same size.
Another cheap tip - if you serve it warm with milk it negates the need for icing

Have baked cakes since school. Wondering about fundraising for charity. Does that mean I have to get a hygiene certificate?
Shame they don't give you that at school!
