Huge pork loin!

Hi guys, hoping you can help me out with this!

I ordered some meat from a local wholesale butchers online a while ago, I was out when it arrived and my lovely kids put it all away in the garage freezer for me. Went to pull out the pork joint yesterday and it is huge - they had to curl it up to get it into a drawer :)

Defrosted it overnight, just weighed it and it is just over 5kg :eek:

Obviously I would have cut it up into smaller pieces before freezing if I had known how big it was but now I have an enormous piece of meat that can't be refrozen so needs cooking today. I am thinking of roasting half of it and doing the other half in the slow cooker with bbq sauce but I am going to be left with a mountain of leftovers - any ideas on what I can do with it all?

    you can refreeze it when cooked ;)

    You can re-freeze it once cooked. I'd cook enough roast for tonight's dinner, and maybe leftovers for tomorrow, and then cook the rest as something like pulled pork in the slow cooker - freeze with all the sauce and it won't dry out. I always freeze pulled pork as there's just the two of us, but OH loves it so to have leftovers frozen that can be pinged in the microwave to make a dinner is really handy. The taste never suffers for it - infact, sometimes I'll reheat it in the slowcooker all day and it gets even more tender from the extra cooking.

    if you want to freeze some of it "plain" once cooked, it can be re-heated in risottos, stir fries etc.
    And also, although not quite as good a texture, it is fine sliced, heated up in gravy and served with veges like an ordinary roast.
