Is making veg stock cheaper?

I have to buy kind of pricey stock cubes in order to get wheat-free ones. Generally I get the Heinz organic ones that are designed for cooking for young children (they're just regular stock cubes, but low in salt). They're £1.44 for six stock cubes, which makes approximately 3 litres of stock. Would it be cheaper for me to be making my own? I heard you can boil it down and keep cubes in an ice cube tray, like those stock pot things.

I've never made it myself, but going on most things that you make yourself it probably is. However, these the question of time to make it and getting the taste that you get with stock pots.

You can certainly freeze stock either home made or powder type which you make with water.
I use stock cubes myself and some actually make a pint of stock which for our use is far to much. So I freeze this. What I do is label a bag first :D then drape over a mug and pour a quantity in that you are likely to use in one go and tie the top. Then repeat and freeze these bags. Then you just defrost a portion at a time.

  • I`d say it`s definitely cheaper - IF & When you have veg that`s either too cheap to leave in the shop/ stuff that needs using up, plus if you have the time to do it. Depends on what you use/what you paid for it, or if it`s just a bid to avoid waste.
I`ve recently made some HM mulligatawney soup that was gorgeous, using HM veg stock & HM chicken stock - but no shame if I`d used stock cubes!

If you don't have to buy much too make the stock it will be cheaper. I save up the leftovers and the ends of veg like carrots, celery and onions, and also onion skins as they add a nice colour. They all go in a bag in the freezer until it's full enough to make a batch of stock. I often end up with carrots and celery needing to be used soon so it doesn't hurt to add extra veg to the stock. Add some herbs such as rosemary and thyme (almost free if you grow them!), a few garlic cloves and seasoning, and simmer uncovered for 45mins or so. You might have to reduce it quite a bit if you want to freeze in ice cube trays but plastic bags and tubs work well for portioning.
