Budget Gluten Free Veggie Meals

As there's been a lot of talk on food poverty on the tv recently, I thought it might be interesting to cost up some of the dishes we turn to when we are well and truly skint, as well as some we will be making soon. We are veggie and I am coeliac, which can be a little awkward!
Some turned out pretty cheap :j
A lot of the dishes are quite self explanatory for those who cook this sort of thing often and therefore don’t really have/need proper recipes, but if anyone would like one for any of them, please let me know!
All prices are based on full priced items at Tesco (except psyllium husk, a gluten substitute for breadmaking, which I buy by the kg from Amazon). Almost everything is from the value range, except some of the pulses, which for some reason are cheaper when bought organic. The flour blend used here and the only store bought one I like is Doves Farm PLAIN WHITE Gluten & Wheat Free Flour Blend. I rarely use oil in my cooking, instead I choose to steam-fry. Seasonings includes salt, pepper, herbs and spices and the prices are approximate. All prices are, if anything, over-estimates.

Roast Carrot Soup (4 servings)
Cheap-o Homemade Pizza (2 servings)
Carrot Dhal & Rice (2 servings)
Gardeners Pie (a mushroom & lentil shepherd’s pie) (2 servings)
Basic Spicy Tomato Rice (2 servings)
*this dish is a bit basic, but I often have it as a quick and tasty lunch*
Bean Casserole & Herb Dumplings (6 Servings, will freeze)
Gnocchi Bake (Serves 4)
Vegetable Hotpot (serves 4)

Thanks. There are some nice sounding recipes there.
I already do a bean casserole but use dried beans as they are much cheaper. Love the look of the gardeners pie, will give that one a try.

When the student organisation I'm part of has events, our food is mostly veggie and gluten-free (and dairy free if possible) because of the dietary needs of many of the members. Some of our favourites:
Veg curry and rice
Lentil or mung bean shepherd's pie (you can get mung beans easily from a supermarket's 'world food' section or from an Asian shop)
Veggie chilli and homemade potato wedges
Homemade hummus and salad (hummus is just chickpeas mashed with olive oil, lemon, garlic, salt + pepper and you can use smooth peanut butter instead of tahini)
Baked potatoes
Soup
I'm not veggie myself but all our food is really tasty and so cheap - we're not a rich organisation!0 -
