Hi all
Today i have made my first ever batch of homemade jam! :j
Turned out beautiful and im really excited (sad i know) so i have now been bitten by the preserving bug
Does anyone know of any recipes for a chutney similar to the Baxter's alberts victorian chutney?
Also i know there expensive but has anyone invested in the kilner jars with sealing disc/ screw lids? And if so are they worth the expense?
Thanks peeps! X

I've never tried that, do you know what the ingedients are for the Baxter's chutney?
I usually re-use the same jars for my chutney - glass with metal lids. Even reused jam lids are usable if the hot preserve is poured into warm jar - the vacuum created usually pops it back in.0 -
The baxters chutney is my alsolute favourite! I will be interested to see if anyone has a good recipe for it0

I use a mixture of used jam jars, but I also use the kilner jars that have the discs and rings. The preserves in recycled jam jars I use first and these ones are used to give away, as you never see your good jars again! I prefer the kilner jars for jam that is going to be kept, if you put the lids on as soon as you pot it, as it cools the vacuum pulls the disc down and creates a proper vacuum and I find keeps better.
Sorry cant help with the recipe, never tried that type of chutney.Every days a School day!0 -
Hi
Thanks for the replies, i do like the kilner jars and they look lovely!
I would love to find that recipe, ahh well0 -
Apparently a recipe very simlar o the baxters one is pan yam pickle!
Ingredients:
1lb bramley apples
1lb dates
1 lb sultanas
1 lb soft brown sugar
¾ pint malt vinegar
2 teaspoons madras curry or to taste. (more but not less)
Method:
Mince all the ingredients.
Place in a suitable bowl, not plastic, mix well and cover.
Leave for 24 hours then bottle in sterilised bottles.
The longer you keep it the better it gets but leave for at least 2 weeks.
This is purported to be Pan Yan Pickle but could equally be called Apple and date relish/chutney. Whatever you call it it is delicious with just about anything you choose. Of all the chutneys and pickles I make this one is the favourite. It also has the advantage that there is no cooking involved, simplicity itself to make.
Makes several jars depending on the size.0 -
Oh no!. ..
You've gone and done it now Bella.
I'm afraid you're lost.
Lost forever to the preserving bug.
Making your own jam is SOOOO nice! and eating it is even nicer. What a feeling of accomplishment huh?
I don't have a recipe for you, but want to encourage you in your jam/chutney making.

Hello all,
I wonder if anyone could help. I have 3lb of strawberries to use to make jam. Please could someone tell me the ratio on how much sugar I need to use.
I have got 3lb of sugar as well as two lemons.
Thank you0 -
That's exactly what you need, one pound of sugar to one pound of berries, and two lemons should be sufficient to help it set.
Happy jamming!Every days a School day!0
