Quick recipe ideas?? (fruity stuff!!)

I've got some left-over apricots, blackberries and raspberries. I have butter (well, Anchor spreadable), flour, eggs and brown, white and caster sugar.

Any ideas for a quick dessert that I can knock up, preferably one that doesn't involve "rubbing-in", as I've just done my nails!

    This is my fav upside down fruit cake recipe. I don't put the spice in.

    It's just a basic sponge on top of fruit but I think it's lovely.
    It's a very thin sponge, depending on the size of tin you use.
    Opinion on everything, knowledge of nothing.

    you could use 2 forks for the rubbing-in bit.

    I sometimes make a 'crumble' with a handful of oats & ground almonds with a sprinkling of sugar - no rubbing-in required :D

    I never rub in I hate that sensation on my hands. I always melt the butter/marg in the microwave add the flour and give it a very good mix with a fork. I am sure 'proper' cooks would be appalled at this and offer many reasons why it shouldn't be done but I've never had a problem using this method.
