Diabetic baking

Hi guys,
I was wondering if anyone knew any cake recipes that were suitable for diabetics? I would like to bake something for my team at work and one of them has diabetes. I'm a bit lost as to what to make. It has to be something that can be cut into bitesize pieces (like a traybake) since we all tend to nibble as we go. To further complicate matters, another one of us has IBS and I'm lactose intolerant!
Any suggestions would be gratefully received!

There are some recipes using sugar substitutes but to be honest the 2 diabetics I have in my life would probably just eat a very small slice of a normal cake.
A tray bake makes this ideal for you to cut up the slices unevenly to give small and larger slices.
Stay away from frosted/ icing sugar toppings though.

You should probably avoid flour too if they're type 2 diabetics.
I have a yummy chocolate brownie type recipe using ground almonds and Splenda if that's any good to you? I can dig it out.Trying to be a man is a waste of a woman0 -

My daughter is 13 and is diabetic on an insulin pump she has all normal food her birthday is this week she will have a normal cake we carb count for everything and her insulin dose is worked out from that so its not necessary to have diabetic food. If the person is type 1 and carb counting normal cake is fine

If you are cooking for someone with IBS, you need to ask what causes their symptoms; if they have been able to work it out, that is. Just to give you an idea, my symptoms are caused by wheat, so I use gluten free flour and my husband's are caused by cheese. It's a minefield and I would be inclined to do what I could but then carefully write down the ingredients so people can decide for themselves. Do look closely at the margarine you use; is it dairy free? contains soya?0

I was wrong. It doesn't have ground almonds in it.
Here's the recipe. I switch the sugar for splenda in the amount it says on the box.

cut it into equally sliced squares and weigh it.. if they have had diabetes a while they will know how many carbs it is!
