Recipes and a few questions :)

Good Morning everyone,
After finding that I have no food budget for this next few weeks I am trying to be as frugal as possible and won't be popping out to get milk, eggs, cheese until Saturday.
I have a banana left in the fruit bowl which is past its best I want to make banana muffins with it but have no eggs in does anyone have any recipes for anything like this please?
Also I baked some cheese scones yesterday (with some cheese that was defo on its way out) can I freeze them, I am thinking they will come in handy next week to fill up my 3 hungry boys.
I have some tinned chopped tomatoes and a red pepper I would be grateful if someone could possibly point me in the right direction for a good soup recipe please.

    Eggless Banana Muffins



    Ingredients
    2 tbsp milk
    2 tbsp butter
    2 tbsp honey or sugar
    2 bananas
    1 cup SR flour
    1 tsp baking powder
    Optional:
    Handful raisin/ chopped apricots
    Couple drops vanilla essence, or any thing else you fancy that you think goes with banana!

    Method
    1. Melt the milk, butter & honey/sugar in pot over a gentle heat. Add bananas and mash.
    2. Pour wet mixture into bowl with flour and baking powder. Mix gently. If it is too dry add more milk.
    3. Scoop in muffin cases (will make 5-6 depending on size of bananas)
    4. Cook Gas 5 for 20 mins or so. The muffins are ready when they are golden brown on top. They will seem quite squidgy but will firm up when they cool.

    And yes, you can freeze cheese scones - they are scrummy reheated when you've defrosted them ;)
