Cooking veg for the week ahead

Hi guys, sorry if this has been asked before, but just wondering if anyone has any tips for cooking a weeks worth of veg at once and to be used for each weekday. I need to have veg for lunch every day, but no access to micro to use freezer steam bags.

    Could you do roasted veg like peppers, onions, squash,cherry tomatoes, aubergine, courgette etc done in olive oil and garlic with lots of pepper and some lemon juice to taste, I often do a big batch of this and mix it through couscous or pasta to have cold.

    Thanks cute, that sounds good. Can you keep roasted veg in the fridge for up to a week yeah? Might b a stupid question, hehe
