Help Me Find My Recipe Please!

Years ago, I used to make this lovely apple cake.

It was really easy to do and all it consisted of was a sponge and some apples and cinnamon - all you did (from what I can remember) was mix the sponge mixture up, add some sliced apples and cook it!

It was a really deep sponge though, one of those big cakes, if you know what I mean - maybe about 2" or so risen once it was cooked, but I cannot for the life of me find the recipe, so would have no idea what ingredients to use now or how much of them!

Has anyone got a similar recipe I can use please?

It was definitely a sponge cake consistency and not anything like a tart or a pie.

    Try this from a Betty Crocker book:
    1.5 cups sugar
    1 cup veg oil
    3 eggs
    2 cups self raising flour
    1 teaspoon vanilla
    1/4 teaspoon nutmeg
    3 cups sliced apples (about 3 medium apples, use anything you've for going wrinkly)
    1 cup chopped nuts (optional but I'd advise)

    Heat oven to 350F, grease & flour a dish (I use a lasagne dish, about 6in by 8in). Mix sugar, oil & eggs, beats about 1 min. Stir in dry indregients except apple & nute, beat again. Stir in apple & nuts. Bake for 35-45 mins or until skewer comes out clean
    Starting early before it all gets out of control!

    This recipe makes a sponge "batter" that is poured over sliced apples which comes out a bit like pineapple upside down cake.

    I'm sure if you wanted to chop the apple and mix it into the sponge batter it would come out how you describe in your recipe. The cinnamon is simple a spice to add extra flavour and just happens to be a great flavour with apple - just add a teasp or half a teasp depending on how much you like cinnamon :D

    Hiya-do you mean this one?

    Apple dessert Cake

    5 oz marg melted
    2 large eggs
    8 oz caster sugar
    1tsp almond essence
    1 tsp baking powder
    8 oz SR Flour
    12 oz Bramley apples( I use more) peeled cored and sliced
    1 oz flaked almonds
    demarara sugar

    Grease a loose bottomed 8" cake tin

    Put all ingredients except the apple, almonds and demarara sugar in a mixing bowl.Mix well until smoooth.Spread half this mixture over the base of the tin.

    Spooon prepared apple over and dot with rough teaspoons of the remaining mixture. Sprinkle with almonds and demarara sugar.

    Cpook at 325 deg F 160 deg C Gas 3 for about 1.5 hrs until pale golden and shrinking from the sides of the tin. Cool slightly before rmoving from tin. Serve warm with cream or ice cream

    I make a microwave cake with apples. I put apples and some chopped up cinnamon stick in the bottom of a dish, plop some sponge mix on the top and microwave it, even nicer with some raisins or sultanas in. Easy peasy too.
    One day I might be more organised...........:confused:
