strawberry tart .. got arrowroot what do i do ?

hi guys
I am going to make some strawberry tarts tomorrow for my mam as its her fave and shes helped loads with the kids ...
i saw on here a while ago someone said to use arrow root, i found some in morrisons cheap so picked it up, but i dont really kno what to do.
Ive got some sweet pasrty frozen so will use this for cases then i was gonna whip up some cream (which cream would you recommend ?) then add strawberrys and then pour over red glaze (hopefully using the arrow root)
question is what do i add to the arrowroot to make it red and strawbeerylicious ? would i just add jam or can anyone help ?
and like i said which cream would be best to whip up - dont usually do cream so dont know the differances
