Cheap, tasty and easy to cook very low fat meals please

As suffering from Biliary colic and already eat a low fat diet to start with.

No been told to eat less fat!

I don't eat bread but eat other sources of carbs- pasta, rice, couscous, potato, noodles and bulgar wheat. I also eat crumpets as well.

I do eat meat. Obviously extra lean beef and mince, which I have in the freezer - both have less than 5% fat. I have chicken as well. Like tinned tuna and have it in both brine and spring water

I eat most veg - apart from swede, spring greens, fennel and radishes.

Also the meals need to have very little prep as in pain and off sick from work for a week. I can eat my food with herbs and spices.

I have a couple of days of FnV in the fridge and need some help with recipes for mum to pick some bits up later this week.

    Other sorts of fish come to mind. I buy bags of smoked haddock from Farmfoods and either oven cook it or microwave. Same goes for salmon. You can buy sardines in brine or tomato sauce too. Aldi have lovely smoked salmon fillets for £1.99 that you can just microwave and have with some new potatoes and broccoli.

    Any sort of tomato based pasta would be OK or perhaps vegetable chillis and curries (maybe not until the heat wave ends!) that could go in slow cooker.

    What about simple stuff like hard boiled eggs, hot or cold. Smoked salmon trimmings make an easy salad.

    Balsamic vinegar makes an easy dressing for salads if you can't have mayo.

    I do Slimming World and that's essentially a low fat diet too but we do use Frylight sprays. Try googling Slimming World recipes or look on their website.

    Chicken is good.

    Try slashing a chicken breast on the top to make a pocket and filling with extra low fat Philly, low fat grated cheddar and whole grain mustard or Philly, low fat feta and Sundried tomatoes and then wrap in oarma ham and bake for 20 mins. There are loads of variations on the filling.

    Make your own Cajun seasoning and dry fry or griddle the breasts (you can do this for fish too).

    Stir fries (use the spray oil) with loads of veggies

    Marinade in lemon juice, garlic and oregano and either bake in the marinade or cut into chunks and skewer with veg. You can do this with fish too (swordfish is good).

    Have a look at the BBC Good Food website, they show the fat content of the recipes so you might find some which are suitable.
