Not just you - I can't get banana bread to work. It looks lovely, but is doughy and moist on the inside, and then goes off really quickly. I now turn bananas into muffins - much nicer. There's a thread running currently with the recipe, if you'd like it.

No, not just you! I like bananas, but I'm not a great fan of banana cake - and I've never managed to bake it properly either. I don't know if it's because I'll only eat bananas when they are under-ripe, and I only ever attempt banana bread when they are a bit squishy and past the point I'd eat them.:staradmin:starmod: beware of geeks bearing .gifs...:starmod::staradmin:starmod: Whoever said "nothing is impossible" obviously never tried to nail jelly to a tree :starmod:0

No, I cannot stand bananas and I like banana cake even less; just mixing it up the other day to bake made me feel very queasy indeed.

Try this thread - Basic Muffin Recipe. My recipe is post 3, and I add 2 ripe bananas and a 100g pack of chocolate chips to that.
I'm with CM - I love bananas when they're under-ripe. Can't bear to eat them raw when they start to go brown. That's when they go into mffins.
