I decided to cook this tonight:

Depends on your tastes. Balsamic will make it a bit sweeter (sherry vinegar def isn't as sweet as this) but regular red wine vinegar will make it a bit more acidic. It will probably taste good either way.
Balsamic will be likely to be more expensive too though if that makes a difference to you...0 -

Just thought I would tell you - this was absolutely delicious!
I ended up using red wine vinegar instead, don't know if I was supposed to or not, but it sure did taste yummy!
And the easiest thing in the world to do - must have been, before I'd attempt to cook it! LOL
