Question regarding mashed potato storage

Hello,
I am making mashed potato for tea which we will be having along with some sausages, but I need to use all my potatos up and therefore will be making more than required. I was wondering how long it would keep in the fridge, because I want to make some vegetable rosti type things on Thursday, as I don't have time tomorrow, and want to know whether it will be OK until then?
Any help appreciated!

I would think it would be okay till Thursday if you can put it in an airtight container.0

I freeze mine in portions. It does produce a lot of water this way so I drain the water out before cooking and you need to make sure when reheating you do it in a pan rather than microwave. Highly recommended though!!0

Hi Bollards,
I think it should be fine kept in the fridge until Thursday but if you're in any doubt, other users say that it freezes well.

Because I have a littl'un at home, I freeze mash (potato, sweet pot or with spring onion etc) in an ice cube tray. It means I choose how many cubes I need, and then cook in the microwave from frozen.0

That's a good idea. I could do that for my son too!
Thanks for all your responses!0
