You could roast it and make kebabs. Or you could make meat & potato pie.

Won't it be tough as old boots if it isnt stewed/casseroled in some way?

I would use it in a beef and ale casserole, and then use the left overs in a pie. Or 2 pies if dead set against casserole.

    Stewing Steak
    Onions
    Mushrooms
    1/2 pint of ale/guiness
    1/2 pint of beef stock
    1/3 bottle of passata
    Salt/Pepper

Toss meat in seasoned flour and brown. Add to casserole/slow cooker along with a little more flour to thicken. Add onions. Add liquid. Cook on low all day, adding quartered mushrooms a couple of hours before ready to eat. Check seasoning. I use passata, not tinned toms as i find the sauce is more 'velvety'.

Casserole with a good glug of red wine, a few herbs and maybe even a dash of tomato puree and it makes more than just casserole! Good excuse for opening the red wine in any case! Alternative already been suggested with a good glug of beer!
