    for crying out loud......

i go to make a cheese and bacon quiche, then remembered i forgot to take the pastry out of the freezer
Hello, Bought is easy, but you can always make your own it if you have flour and butter. My gran always used to make her pastry quickly using hard butter straight from the fridge and a grater. Coarsely grate about 3oz butter into 6oz flour and 1/2 teaspoon salt in a bowl. Stir with a knife. Add a couple of tablespoons of cold water, or a bit more as needed. Mix gently with knife into a ball. Cover and leave for 5 minutes. Roll out and use for quiches, jam tarts, whatever! She preferred half lard and half butter for an even 'shorter' savoury pastry.

She also did a rough-puff the same way, but just used 1 and a half times the butter, ie 4.5 oz to 6oz flour She then rolled this out folded it in thirds into 3 layers, turned it, rolled out and folded into 3 layers...turning a quarter turn and rolling and folding 3 or 4 times. She then chilled this for about 30 minutes before using to make sausage rolls or top a pie. Mmm.... brings back the memories!
I am not young enough to know everything.
