Inspect the elderflower heads carefully and remove any insects. Place the flower heads in a large bowl together with the orange and lemon zest.

Strain the liquid through a scalded jelly bag or piece of muslin and pour into a saucepan. Add the sugar, the lemon and orange juice and the citric acid (if using).

Heat gently to dissolve the sugar, then bring to a simmer and cook for a couple of minutes.

Use a funnel to pour the hot syrup into sterilised bottles. Seal the bottles with swing-top lids, sterilised screw tops



most people recommend using less sugar ,today I have used 75% splenda and 25% sugar ,I have tasted and it suits me so adjust accordingly.

Lots of good uses.

I stopped when I saw the bit about insects yuck lol but no worries. OH was happy to sit in the sunshine on inspection duty.

It's got itself stuck between the shading and the glass. I've dropped down some shading for it to get out but it's too busy smacking the glass to notice that it has got a big fat escape route!
