chopped pork ... loads what to do with it ?

hi everyone
last night i really fancied a chop pork sandwich .. i was at my dads and he has an emergancy supply of food and stuff in the garage for the appocolypse (i know) well my mams said he has to get rid of it now as she wants here garare back, so he gave me a catering sized tin of chopped pork :eek:
i had my sandwich for my dinner last night but what do i do with the rest ??

i was thinking quiche and mebbies omlete ... any tips anyone ?

hes also got crates of corned beef so thats gonna go into some pies next week ...

any recipies for these things or other suggestions would be great

    Hi, I make a Pek and Egg Pie which is absolutely delicious so you could use the chopped pork as a replacement for the Pek.

    Basically I chop up the meat, add 5 or 6 boiled eggs quartered and cover in a cheese sauce with a bit of wholegrain mustard stirred through. Top the whole lot with some mash and bake in the oven until the top goes all crispy. Guarenteed clean plates in my house!

    Ham and mushroom pie, ham and cheese bake, quiche, ham and leek pie, fried slices with egg, ham and chips...anything you can use ham for, you can more or less also use the chopped pork for, but if it's salty, cut the salt out of the rest of the recipe....

    I don't know if it's the same thing but we used to have fritters when I was a child. Generous slice of chopped pork, dipped in batter and fried. Totally unhealthy but absolutely yummy!!

    It might be worth trying freezing some slices too. It works with HM gammon.

    When you come to tackle the corned beef mountain.... It might be worth making some pasties and mini-pies as these would be great for packed lunches. I also like corned beef mixed with mash and onion and made into rissoles.

    im going shopping tonight so at least i have some ideas what to do with it ...
    there must be at least another 20-30 tins the same so mebbies in a couple of weeks ill finish off the recipies i dont get done this week ...
    next week is corndbeef all week :o

    corned beef...

    Hash, pies, pasties, sandwiches, with tomato in a tray bake like pork below. meat loaf,

    Pork..

    Pork and tomato slice (tray like for a tray bake 2cm deep or thereabouts.. layer of pastry, layer of tomato, layer of ham/pork add egg or not if you have any and another layer of pastry .. cook.. cut into squares and eat!) carbonara use instead of bacon, pasta bake, grilled, battered and fried,

    Same thing :)

    Corned beef pies can be frozen too once they're cooked, or frozen uncooked, the same for pasties, my father does it every christmas.
