Bread machine but oven bake

Hi all, I've got a Panasonic bread machine but fancy using it on the dough setting then oven baking. Has anyone got some good tips or recipes for this? Can I use any bread recipe (like the one in the manual) but just oven bake? What size tin do I need to get? My guess is 2lb for a 500g flour recipe (although loads I've found seem to be in cups!). Can I use a bigger 2lb+ tin for a 2lb loaf? Thanks :-)

Yes you can use the 2lb+ tin and a tip for when you bake it, put a pan/tin/bowl with some water in the oven as well, help's keep it moist and also 'seem's' to make it rise a bit higher.hth

I find it's a bit trial and error with bread machines, but using the dough setting and then oven baking the loaf sounds like it will work. I tend to use the dough setting for pizzas or bread rolls. With bread (unlike pastry dough!) it's good to make the mixture quite moist as it gives a lighter loaf.

When I'm pushed for time I use a bread machine to mix on the Butter setting then oven bake. (never use my bread machine for the baking part anymore as it produces poor bread IMO).

I use basic bread recipes, for instance this makes a nice bloomer type loaf (or two smaller ones)

    500gm strong white flour
300 ml warm water (100ml boiling + 200 ml cold)
    2 tsp sea salt
1 tbs good quality vegetable oil
    2 tsp quick yeast.

There are lots of variations but the above recipe is good and I find not too floppy and is excellent if you want to bake your bread hand shaped on a baking sheet as I do.

    Good luck with that

The basic recipe Grouchy posted above is my fail safe recipe, I've used it very successfully in a bread maker on the dough setting before I got my Kenwood with good results for loaves, french sticks and rolls.

If you're only making dough you don't need to worry about putting it in the right order and you don't need to use sugar.

    Good luck, enjoy.

Thanks all! Can't wait to give that a go in a day or so. Just got a cheap 2lb tin from Tescos to play with. Might get a better one if all goes well. Do you grease the tin or add flour to the tin or dough before baking?

It really depends on the tin, I have ones that don't need oiling and some that do, for the first bake I would lightly oil it just in case.
