    I chop it up, freeze it on a tray (so it stays loose) then when its hard, i tip it into a freezer bag.

    There is the suggestion of putting in a glass of water to keep fresh in that thread? Sorry, i don't buy it much .

    You could make celery soup? You could add to home made stock? Or What to do with celery may give you some ideas :)

    I'll merge this later with the thread you have already found (well done for finding it :D )

    I do the same then add to any of the casserole recipes I do that ask for a stick of celery.

    I had the same problem, when it was cheaper for me to buy a whole bunch of celery, but I only needed a couple of stalks for the soup I was making at the time.

    You need to chop it up and blanch it, then freeze it in water. I also divided it up into the same quantities I'd needed for the soup.

    Evidently, that way the water inside the celery and water outside freezes and expands on both sides of the cell walls and it won't go to mush when you defrost it.

    I haven't actually defrosted any yet, though.
    The acquisition of wealth is no longer the driving force in my life. :)

    We just chop it into a size that we are going to use it in cooking, bag it and freeze it.

    As it is usual used within a month or two, we do not bother to blanch it.
    I used to be indecisive but now I am not sure.
