I am organising a table top/craft fair and i will be having a cake sale. I was just wondering if anyone could recommend some good cake recipes? I was thinking of tray cakes.

Some cakes that can be made in advance would be good.

    I have never done a cake sale, but would be happy to suggest a few things that might be reasonable to make.

    You wouldn't have to use proper mars bars - supermarket own brand ones might be cheaper. As with the rice crispies. They taste like rice krispie squares. You go make them a bit 'rocky road' and add marshmallows and dried fruit etc,

    I've been Money Tipped!
    I often do a carrot cake with cream cheese frosting for bake sales (you can do it tray-bake style or as a layer cake) which is quite popular. The cake will keep for a few days without any problem or can be made and frozen in advance - just defrost and put the frosting on the day of the sale.


    This is a great recipe for chocolate sponge - quite light, with a very soft crumb and inexpensive to make because it uses oil rather than butter. I use rapeseed oil rather than sunflower because it is healthier. It isn't over the top chocolatey so you can use fairly rich toppings (my favourites are raspberry buttercream and whipped chocolate ganache)

    I just use the sponge part of the recipe and have made it into big cakes, cupcakes and tray bakes with success.

    Get a copy of Mary Berry's original cake recipe book (from the library or charity shop?) There are some amzing tray bake recipies and honestly I think she might be a witch because they always turn out good whenever I follow one of recipies!

    Also one tip would be to buy the disposable tin trays that come in a pack of about 5 in the shops. You bake the cakes straight in them, they are easy to transport and you can cut the cake into squares and sell it straight from the tray.

    One last thing that might be useful, I said I would do some baking for a sale and like you thought tray bake! I was planning on doing it from scratch but Morrisons have an offer on for 2 boxes of cake mix for £2.50. I got 2 different brownie mixes that come with a tray you can bake and serve them in. Just an idea!

    oh one final, final thing. The Humming Bird Bakery book is also great. The recipies are a bit more involved but they are yummy! Especially the lemon bars! Good luck.
