I make muffins, with whatever fruit I've picked up reduced/or is going wrinkly. Always with part wholemeal flour, and replacing part of the flour weight with a handful of oats. They don't rise so much but are much more filling. They freeze well.
Slice of quiche/frittata with potato/pasta salad as well as green stuff (more filling). Soup or stew in a food flask and a roll. I find it's hot at lunch time, it varies according to the flask. Make sure to pre-heat it with boiling water and make food really hot.
There's been an ongoing thread on the Debt free Wannabee board over the last few months with loads of great ideas and links to recipes.
Have to point out if it is for an adult I would always suggest they think about what they want/would find filling, but maybe thats just me ; )0
