Eccles Cakes..?

hi Everyone...
I have been really good lately... made Banana Bread as I had some bananas left over and last night made choc chip cookies from a be-ro recipe that my lovely nan gave me... yum...
My dp took some cookies to work and they have requested more!!! yeah! and his mother says I can't cook :mad:
Anyway... dp has requested eccles cakes... he loves them and they are quite expensive and full of "trans fat" when you get shop ones so he tells me (I have no clue what that is).
Anyone got a recipe for me??? I want to make them tonight and I am not sure if I have a recipe at home... and I prefer "tried and tested" recipes anyway.

Eccles cake recipe here - not tried and tested by me, but by a top chef contestant on "The Great British Menu" who researched traditional recipes and reckoned this one was the business. Ignore the tea creams, although they did look rather interesting!
