I seal silverside in te wok with a little olive oil then into the slow cooker with about half an inch of water, leave it on on low for around 10 hrs and then rest for about half an hour.

The myth of silverside being a good slow cooking joint is a weird one. Silverside is very lean and has no collagen making it very unsuitable for long, low temperature cooking.
If you want a great slow cooking cut you need to go for oxtail, brisket, shin, cheek, etc.0
