The New Zealand Biscuits recipe mentioned by a previous poster looks like an ANZAC biscuit recipe to me. The ANZ in ANZAC stand for Australia and New Zealand, so I would think that this is the recipe you are looking for.
2oz golden syrup
5 oz butter
4 oz castor sugar
3 oz rolled oats
2 oz desiccated coconut
4 oz plain flour
2 level teaspoons bicarbonate of soda
Grease 2 baking trays. Put syrup, butter and castor sugar into a pan and leave to melt over a low heat. Remove the pan from the heat and stir in the dry ingredients. Disolve the bicarb in a bowl in 1 tablespoon hot water. Add to the other ingredients and allow to cool for a few minutes.
Divide into 30 portions, roll into balls and place on the baking trays, allowing plenty of room between each.
Bake for 20 mins gas mark 3 or until the biscuits are browned evenly. Remove from oven and leave on trays for a few minutes to harden. Cool on a wire tray.
thanks, that would of taken me ages to type out:A0 -
