Needing help with meal suggestions

Have had to change my diet due to gallstones causing a lot of problem so a lot of the cheap, easy meals I had planned are now off the menu.

I can't eat any processed meat, including mince. And some veggies are causing a problem but not isolated which ones yet.

I'm also eight months pregnant so need lots of good food to fill me up as I'm hungry all the time.
OH eats a lot, am trying to wean him off the junk food but he's now finally eating casseroles and slow cooker type meals, so hopefully there's some leverage there.

I need a two week plan for evening meals. He has sandwiches usually for lunch as I can't really think of anything more inventive!

    Can't quite understand why mince is considered processed meat but what about going to the butchers and getting him to mince some lean steak, would you be able to have that?

    I think I would be considering egg based things like quiche, omlette or fritatta with salad or boiled potatoes and vegetables, once you've sorted out what you can have.

    Roasts are probably another thing you could work with. Hot one day, cold the next and as part of a stew the following day.

    Its usually fat that causes gallstones to flare up, so if you stick to a diet that is as fat free as possible you should be fine.

    I had gallstones a decade ago (gallbladder been removed since) and I stuck to very, very low fat foods to cease the attacks.

    Fruit, veg, lean meat, non-oily fish, boiled pots etc should all be fine, its creamy/oily sauces, fatty meats, oily fish, full fat milk etc that should be avoided.

    I got used to cooking without oil, usually using tinned toms as a base, and sticking to steamed, grilled or boiled food, never fried, and never with any fat added at all.

    Good luck, it can be exceptionally painful:(

    Not entirely sure why no mince but consultant said no as it takes a lot to digest which will cause a problem between the gallstones and pregnancy.

    I'm thinking that a rubber chicken should be fine for a few receipes as long as I don't eat the skin (which I don't usually)?

    What other lean meat is reasonably priced and easy to stretch? It seems t be where the majority of our food spends go.

    Rabbit is really lean and healthy as is most game.
  • Morning SPARKLES , turkey in all its forms is very low fat and healthy and makes all sorts of nice meals, if you have a food processor you could blitz up a turkey steak to make burgers or meatballs, it even makes a nice shepherds pie base as well. Hope that helps, Cheers Lyn x.

    One option might be to grill or bake meat for you both and to prepare some richer sauces that your OH can have to supplement the meal.

    You could use things like (proper HM) apple sauce, red currant jelly (cold or warmed through and even spiced with a little clove), plum sauces whilst OH has bread sauce, cream sauces or butter based sauces. If you remove all the fat from his diet, he is going to fell very hungry. You could batch make and freeze most of them.

    Edit - when I was on a nil-fat diet for medical reasons, I was advised to use a small amount of white wine to de-glaze pans and make sauces. You can use any really cheap chardonnay and one bottle will last ages if you have a decent vacumn stopper.

    Also good for pasta sauces.

    A friend of ours had his gall bladder removed last year and while he was waiting for the op I made him this, it went over well (I grilled the chicken and fried the chorizo seperately to miss out the oil), as its tasty and filling:
