you can cook eating apples but I would cook the apples before making into pies tarts etc - I made apple tart with Braeburn apples a couple of months ago and even after 35 mins in the oven the apples were still a bit on the crisp side!
I agree - used half and half last week to make caramel apple tart (didn't have enough bramley apples) - braeburns were still hard when pie was cooked
