How long does a mortgage app take and help on salary info?

help!!
i submitted my application on friday and my mortgage co received it on monday. its still being assessed at the moment and when i rang this morning they said they'd ring before lunchtime with the outcome. i jsut rang them and they said its been passed to another team to be assessed and that we probably won't hear before close of biz today. I really need to arrange my survey asap as my sellers are refusing to give out a key to the property and are going on hols for a week on friday but HAVE to (apparently) exchange on the 13th.
Also the mortgage co have sent a thing to my employer asking for confirmation and salary details (fair enough) although we sent this in with the application as my employer is huge and refuses to do individual ones jsut automated ones.
when i spoke to the mortgage co about this they said it has to be the one that they send. Arg! two companies both being blooming stubborn and ruining my chances of getting my dream house...
what can i say to the mortgage co or my employer???

Errrr just relax. What are they going to do if you dont exchange by the 13th? NOTHING. To be honest you would be pushing it to get the offer, searches etc all in place by the 13th anyway, and if they have chosen to go on holiday and wont leave a key then they are delaying their 13th exchange - not you.
Re your employer let the two sort it out between them. I am sure they have this all the time.0
