    Two denials that it's personal? Sounds like it's probably personal to me.

    Tell them all to keep records of when they work, make sure they have as much evidence as possible, copies of rotas, emails asking them to work the hours etc.

    When the first one get them to put in a claim to an ET for back pay.

    They probably don't get the correct holiday pay either.

    Whats the tipping situation?

    Two? I personally don't like it. I don't know the chap at all.

    Not sure on the tips. Certainly it isn't added to anything official - ie via their weekly wage.
